Marie's scallops
Ingredients for 6 people
Scallops (12)
12 napkins
250g semi-salted butter
250g basmati or Thai rice
Leeks
4 or 5 shallots
Parsley
Green salad
Instructions
Place the scallops on the napkins. You may hear them snap as they are still alive.
Bring guests' hands together in a single bowl.
Force open the shells by inserting the knife just before the hinge and levering, slice off the sinew, recover the nut and any coral.
Mince 2 leeks, stir in butter in a frying pan.
Cook the rice and keep warm.
